We purchased 4 copies of the Adobe Creative Suite Premium, and it came with Version Cue.

I love the idea of it, to keep track of work by our team. But, I don't like the idea of installing it on one of our workstations to store everything. So, I'd like to use a spare PC networked to all of us as our Version Cue "SERVER" so to speak.

Can this be done without a violation of the license? Or are there any technical snafu's about doing this?

That's perfectly acceptable as stated in the EULA and works quite well that way. There are several great PDFs illustrating how to use Version Cue here:
