How does DNG handle Nikon curves and Canon picture styles?
My understanding is that Nikon "curves" and Canon "picture styles" are held in NEFs and CR2s respectively. They can then be catered for by Capture & DPP.
What happens when those NEFs and CR2s are converted to DNG? Are they lost? Are they, in fact, within the EXIF Makernote, and so get retained in DNGPrivateData? If the latter, in what format?

Are they lost?
The most recent versions of DNG retain all of the info, even that which it doesn't understand. I leave the rest of your questions to Thomas Knoll, who is currently shooting penguins in Antarctica.

When asked if I wanted a place I declined Antarctica in favour of a winter shoot in Yellowstone during January. I don' mind the cold but the thought of floating around the South Atlantic/Southern Ocean wasn't as attractive as Terra Ferma ;-)

Now that Thomas is back, perhaps he could answer this?
(I look forward to seeing some pictures, especially landscapes, from that trip! With that set of photographers in that location, there are no excuses).

Both the Canon picture style and the Nikon curve information is stored inside the private MakerNotes of their raw formats. Starting with ACR/DNG 3.1, these private MakerNotes are copied (along with original file offset and byte order information) into the DNGPrivateData tag in DNG files. So all this private information is now preserved in DNG. Currently ACR ignores this private data, but it is there if some other software (or future versions of ACR) decide to use it.
